As its name suggests the Delete command erases the task from the Tasks view. The Document to which it refers is unaffected; it's still on your web. There's a difference between deleting a task and marking it completed. If you want to keep track of the history Mark as Completed else Delete task.

When you open a web in Tasks view you'll find the tasks view open. Select Customize Home Page task.

You can delete a task from the task view by Right-Clicking over the selected task.

Select Delete command from the sub-menu as shown below.
